This was one of the most satisfying clean meals I think I have ever had! And yes - I did go with dairy on this one, even though I typically try to avoid dairy. But I felt this one really needed it!
My husband wasn't a huge fan of this lol. He hates cauliflower though. But my 3 year old ate a ton of it!
This makes about 4 adult servings, or fed my family with littles and I had enough for work the next day too. Would make great meal prep lunches!
What ya need:
1 pound ground sausage (I used turkey sausage)
1/4 cup diced red onion
3 garlic cloves, minced
1 medium can petite diced tomatoes
1 12oz bag steamed cauliflower rice (or 1 head, riced)
2 tablespoons taco seasoning (no added sugar or other additives)
3/4 cup chicken broth
1/2 cup shredded cheese of your choice
Optional garnishes: cilantro, greek yogurt, diced avocado, or guacamole
What ya do:

I LOVE oatmeal. I really do. It's warm and satisfying. It can be made into many different flavors. It's also very convenient to have on my busy mornings at work!
BUT - sometimes I need something more low-carb. Sometimes I need something higher fat. That is when I LOVE to make NOatmeal!
It's similar to oatmeal but there are no oats in it. Instead it has lots of health-packed seeds and coconut.

Ya'll know I LOVE tacos. LOOOOOVE them.
They are just so versatile! There are breakfast tacos, lunch tacos, dinner tacos, even dessert tacos! You can get them with just about any protein or veggie. They can be made vegetarian or vegan. You can make them gluten free or dairy free. I mean seriously.... they are the best food EVER.
So of course I needed to find a way that I can fully enjoy some amazing tacos while being able to stay on pretty much any plan I am doing, and will work for my clients too. Not to mention, one that my family will love because I do not make multiple meals!
So I put together this recipe!
If you don't need to stay as low carb, you can use other tortillas. If you need to adjust these in any way, you totally can. That's what I love about them!
This is a pork recipe I have been using for YEARS. We LOVE it. And it's fantastic for meal prep day. Make this pork and then you can eat on it all week by having tacos one time, putting it on salad another...
Do you love tacos?? I know I do! Tacos are legit LIFE. I mean think about it...you can have a breakfast taco, lunch taco, dinner taco, or even dessert taco. SO. MANY. OPTIONS. I decided to make a taco that had my favorite meat and flavors, but with a high fat low carb gluten free clean tortilla that was easy to make. The first time I made them, I was instantly in love!
When I am in the high fat low carb phase of my nutritional routine, I can make these delicious tacos, satisfying my cravings without sacrificing all my hard work!

I absolutely LOVE french onion soup. It’s so warm and comforting. It has the most amazing flavor. To be totally honest, I’m especially obsessed with the one from Panera! Theirs is SOOOOO good.
But I went and looked at their ingredients for the soup and found that even though Panera is known for being pretty clean eating, it does contain white flour and white sugar. Granted it is still way better than many other places! But I wanted to make one that did not contain any sugar or flour.
So I did! I made a batch of this over the weekend and portioned it out into containers to have for lunches during the week at work.
I want to preface this by saying I try to avoid gluten and cow dairy, so I did not put any bread or cheese on mine, however you totally could! I will probably have it from time to time with some gluten free bread and maybe some goat cheese, but for now, I just wanted a good low carb soup option!
